The scene in Bane's underground lair in TDKR is a good showcase for his villainy:

"Kill him. Then I'll kill you."

Shortly followed by one of my favourite lines in the film:

Goon: "He's dead."
Bane: "Then show me his body..."

A ton of stuff the Emperor says in ROTJ is awesome villain dialogue...

"As you can see, my young apprentice, your friends have failed. Now witness the firepower of this fully armed and operational battle station!"
"Oh, I'm afraid the deflector shield will be quite operational when your friends arrive."
"It is unavoidable. It is your destiny. You, like your father, are now mine."
"The alliance will die. As will your friends."
"And now, young Skywalker... you will die."

What a great character (best thing in the film) completely ruined by the prequels.
